The perfect tofu scramble for any time of day because who says you can’t have breakfast for dinner?
This tofu scramble is high in protein, has lots of spices for flavour, and has nutritional yeast so you know you’ll be getting that B12 + more :). Nutritional yeast is amazing and if you haven’t tried it yet you definitely should.
Nutritional yeast is good because it contains:
- B12 and folate
- amino acids
- no gluten
- a flavour that can imitate cheese
What’s not to love about that?
- 1 package firm or extra firm tofu
- 1/4 cup nutritional yeast
- 1 tbsp soy sauce
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp ground turmeric
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1 tbsp olive oil
- 2 shallots or onion of your choice
- 2-4 small baked potatoes chopped
- 1 red bell pepper chopped
- 1/2 tsp red pepper flakes optional
Drain the water out of the package of tofu. In a bowl, crumble up the tofu and add in the nutritional yeast and soy sauce.
In the same bowl, add in the garlic powder, paprika, turmeric, salt and pepper. Set aside.
In a frying pan, heat the oil on medium heat.
Add in the shallots (or onion of your choice) and the baked potatoes. Cook for a few minutes.
Add in the red bell pepper and red pepper flakes (if using). Cook for a couple more minutes.
Add in the tofu mixture and mix it well. Let it cook for about 10 minutes and continue to mix around so it doesn't burn or stick to the pan.
Serve the tofu scramble once it is done cooking and hot.
